Wine Description: Cabernet Sauvignon
Aromas of blackberry, black
currant and plum meld with layers of cinnamon and vanilla when
you first uncork this wine. Wait a minute and you’ll enjoy the
soft hint of a Cuban cigar box. With a solid and pleasing core
of Cabernet flavor, this wine comes across with rich fruit flavors
of black cherry and full ripe raspberry. The plush texture gives
way to the gentle undertones of vanilla leading to a long, satisfying
finish.

| Food Recommendations:
Our 2005 Cabernet Sauvignon is the perfect companion
to all grilled or roasted red meats as well as pork. For an easy
but elegant meal, combine fresh chopped rosemary and thyme with a
sprinkle of garlic salt and ground pepper. Drizzle a small amount
of olive oil over a leg of lamb. Use your fresh herbs as a rub for
the lamb then grill in the oven or on the barbecue. Serve with our
Cabernet and be ready to impress your guests. Enjoy! |
| Winemaker's Notes:
The 2005 growing season began with a relatively cool,
rainy and late spring, providing a slow start to vine growth. These
cooler conditions lead numerous varieties and appellations to start
blooming at about the same time. The long summer weather was mild
and moderate, encouraging extra growth, increased berry size with
heavier and tighter clusters. The weather cooled toward the end of
the growing season delaying harvest by 10 days to two weeks later
than usual extending “hangtime” for perfectly balanced sugars and
acids. Colors in red wines were intense, inky-dark and opulent. 2005
looks to be another stellar vintage!
BLEND: 84% Cabernet Sauvignon, 9% Merlot, 4% Syrah
and 3% Cabernet Franc.

Our
2007 Napa Valley Merlot has bright, inviting aromas of cranberry,
black currant and succulent blueberry wrapped around rich, dark chocolate
and vanilla. This full-body wine opens with fresh blackberry and
cranberry laced with flavors of creamy mocha and dried cherry. Abundant,
mouthwatering flavors combined with soft, supple tannins lead to
a long, satisfying finish. Whether relaxing with a glass of this
Merlot by yourself or serving to friends and family to enjoy with
dinner - this wine is sure to be a hit with all!

It’s “love at first sip” when you serve this
Merlot with grilled lamb skewers alongside sweet Maui onions and beefsteak
tomatoes. Those daring enough to try grilled ostrich loin wrapped
with sliced bacon and served with pomegrante reduction sauce will
be astounded at this pairing. Our Merlot is absolutely perfect served
with roasted coco encrusted pork loin, leg of lamb, beef stew or wild

A widely appealing Chardonnay with aromas of fresh
citrus blossom, dried white peach, nectarine and pear are apparent
as soon as you pop the cork. These wonderful fruit fragrances are
intertwined with soft butterscotch and French vanilla. Crafted
with fresh pear, apricot and green apple flavors this classic Chardonnay
has a round mouth feel leading to a clean, crisp finish.

This crowd pleasing Chardonnay is perfect, slightly
chilled, by the glass. A perfect companion to traditional dishes
such as oven roasted chicken, grilled pork shoulder or a summer
salad. This wine is also a superb choice when serving fresh scallops
or prawns, Fettucini Alfredo or Chicken Parmesan. A great choice
to pair with fresh fruit tarts or pecan ice cream. Enjoy! |

Sometimes we just have to pay tribute to the weather
gods, who provided us with some spectacular conditions and made this
one of the shortest growing seasons on record for the past 20 years.
Although being one of the shortest growing seasons, it managed to
produce the third largest harvest in history. September arrived with
its usual heat and the chaos of harvest went into full swing. While
berry size appeared to be smaller flavors seem to be full and intense.
From all indications this looks to be an exceptional harvest with
superior quality wine!
BLEND: 100% Chardonnay. AGING / FERMENTATION: Fermented
and aged in a combination of French and American oak barrels and
temperature controlled stainless steel tanks.
